Chunky Chockie Oat Cookies


Deliberated a lot over how to spell Chockie... is it Chockie or chocie or choccie?? Anyway.

They’re oatie. And they’ve lots of chocolate.

You can leave out the Easter eggs in the middle but I’d up the chocolate chunks in that instance.


These are not massively sweet, they’re quite an old style recipe and more like cereal bar / granola bar rather than a modern cookie. Don’t be expecting M&S style cookies is all I’m saying!💁🏻‍♀️

These were great for out in the hills cause they kept you full for a while instead of that initial sugar rush. “Something a bit more substantial” is what me mammy would’ve said! 🥰

Grab;

115g butter

2 eggs

50ml milk

1 teaspoon vanilla essence

115g oats

180g chocolate chunks

115g soft brown sugar

150g plain flour

bag of Cadbury miniature eggs


How to?

  1. Cream together the butter and the sugar until pale and fluffy

  2. Add eggs, milk, and vanilla essence. Beat again until well mixed together

  3. Add the flour, oats and chocolate chunks and mix well with a wooden spoon or spatula until a dough forms

  4. Chill the dough for 30 minutes

  5. Preheat the oven to 180oC and place a silicone liner / grease proof paper onto a baking tray

  6. Using an ice cream scoop, take a scoop of the dough and form it into a small ball between your hands. Insert a miniature egg into the middle and ensure the dough fully covers the egg

  7. Place into a lined baking tray and repeat until all the dough is used

  8. Bake for 10-12 minutes until golden brown
