Favourite classics never get old 🥰
These can be made with normal flour too if you wish. Or make them dairy free and use a dairy free butter & chocolate. No nuts so ideal for lunch boxes for little hands or great for that 3pm slump 🙃

Grab:
115g sugar
225g butter (room temperature)
115g gluten free flour
1 teaspoon xanthan gum (or baking powder if not doing gf)
280g gluten free oats
For the top:
300g melted chocolate
How to?
1. Cream butter & sugar together
2. Add flour, xanthan gum & oats
3. Bring together with your hands and bring into a flat disk shape
4. Gently roll out to 1/2 inch thick
5. Cut your round and place on a lined baking sheet for. Bake at 150oC for 20-25 minutes until started to crisp up and going slightly golden
6. Transfer to a cooling rack and leave to cool
7. Melt your chocolate. Dip the biscuits into the chocolate until 1/2 coated.
8. Place on a baking liner or greaseproof paper to set so it doesn’t stick to the cool rack
These will keep in an air tight box for around a week. I mean mine never last that long so that’s a rough estimate 🤪
