Peanut Butter Brownies

I haven’t been baking in a few weeks due to covid and then moving to Sligo, so what better way to come back than with Peanut Butter brownies! It’s giving an absolute stinkier of a day tomorrow with the rain tomorrow so these are the perfect weekend treat! 😁



Grab:

  • 185g butter

  • 185g good chocolate

  • 85g plain flour

  • 40g cocoa powder

  • 90g Reece’s peanut butter cups (minis)

  • 4 tablespoons peanut butter

  • 3 large eggs

  • 275g caster sugar

For the top:

  • 85g milk chocolate

  • 90g Reece’s peanut butter cups (minis)

  • 2 tablespoon peanut butter


  1. Line and grease an 8x8 tin with grease proof paper

  2. Melt the butter and chocolate together either in short bursts in the microwave or in a bowl placed over a pan of barely simmering water

  3. Place the eggs & sugar in a bowl and whisk until pale and creamy

  4. Add the melted chocolate and butter slowly to the eggs and fold together with a spatula until combined

  5. Sieve in the flour & cocoa powder and fold until just combined. Gently does it!

  6. Pour into the prepared tin and add in 90g of Reece’s mini peanut butter cups. Spoon the peanut butter into the brownies in small bits and swirl through with a knife

  7. Bake at 160oC for 25mins until brownies are just wobbling as they’re taken from the oven

  8. Melt 85g chocolate in a bowl. Melt 2 tablespoons of peanut butter in another bowl.

  9. Pour the melted chocolate on top of the brownies and then pour the melted peanut butter on top. Create swirls or feathered effect using a knife. Sprinkle another 90g of peanut butter cups on top. Leave to cool completely before cutting.
